Not really.  Sinister canton assumes something sitting in the middle
of the space a canton would take up if one were there, sinister chief
assumes it's tucked into the top corner with space above and to the
edge-side.  If there's any difference at all it's measured in
millimeters.  Sebastian zem Sterne's compass star is blazoned in
canton 'cause he liked the term better and Laurel left it because it's
clearly descriptive.  It could as well have been blazoned in dexter
chief.

For purposes of conflict checking, there's no difference whatsoever.
For purposes of blazon, clarity and perhaps flow of blazon would
probably dictate the wording.
